Decadent Challah Recipe

I looked all my life for the perfect dinner roll and here it is.  From my table soon to be yours.  Enjoy.

Decadent Challah Bread

Ingredients
1/3 C Honey
3 Tbls Sugar
1 1/4 C Warm Water
2 1/4 Tsp active dry yeast (2 pkgs)
1 1/2 tsp salt
2/3 C olive oil
2 eggs
5 cups flour (you can use all purpose or bread)

Oven set at 375 degrees

MY WAY USING MY BREAD MACHINE
In a 2 cup measuring cup let yeast, sugar and warm water set until nice a frothy (about 15 minutes or so).  Pour this into bread machine.  Measure the olive oil and honey in your cup from the yeast mixture (stir) add eggs and slightly beat, add salt and again slightly beat to make sure all is mixed well.  Add this wet mixture to bread machine with yeast.  Add 5 cups of flour and set bread machine to dough setting (do not bake it) on my machine is it number 7.  Let it do its thing until done.

Hand mixing here is the directions from the recipe:
Dissolve sugar in water in large mixing bowl, stir in the yeast.
Set the mixture aside until the yeast forms a creamy layer on top (about 15 minutes).  Stir in salt 2/3 cup of olive oil, 1/3 cup of honey, beat in eggs.  Add the flour 1 cup at a time until the dough is slightly tacky, but not sticky wet.

Turn it out onto a floured surface, and knead until smooth and elastic, abut 10 minutes.  Lightly oil a bowl, place the dough in the bowl, turn the dough over a few times to oil the surface then let rise until doubled in warm, draft free place (about 90 minutes).

When risen you are ready to form it into what you want.  This recipe makes 2 loaves of bread or about 16 rolls.

When formed let rise about 15 minutes in a warm place while oven is heating to 350 degrees.  I do not know how long it takes to bake a loaf but would think about 40 to 45 minutes.  Rolls take 10 minutes in the oven.

Brush the tops when first out of the oven with your choice depending on how you want them to look.  I used milk on these but sometimes use butter or if I want them shiny I brush with beaten egg whites.

To insure they turn out just right you often will find me doing what my Partner calls Mojoing the bread.  I wave my hands over it after it is in the bread machine and say 3 times.  Mojo Mojo Mojo and this has never failed to produce perfect dough.  Without the Mojoing… my bread has at times failed to be perfect.  We do not know why.
