Perfect every time, have used this recipe for many years without fail. If you use butter in the recipe the cookie will turn out soft, moist and buttery. If you use shortening your cookie will be perfectly flakey, why not try both? You are gonna need a lot to share. This recipe makes about 4 dozen cookies.
Above you will see that I used the miniature muffin cups and a miniature muffin tin. Simply put your ball of dough inside the cup and flatten slightly with a fork then bake as usual. When they come out of the oven put your peanut butter cup in the center immediately and the chocolate will melt into the cookie all by itself. I ran out of miniature cups so above you also see the candy as it looks if placed in the middle of a cookie. The cookie type was the ball of dough just barely smashed with a fork but still round looking.
Peanut Butter Supremes
preheat oven to 375 degrees. cooking time is 10 minutes per sheet.
1 cup Shortening or Butter 1 1/4 cup Peanut butter
1 cup granulated Sugar 1 cup Brown Sugar
2 Eggs Slightly beaten 1/4 tsp Salt 1/2 tsp baking soda
2 1/2 cups of all purpose flour add 1 cup at a time mixing well and then judge when enough is added sometimes a little more, sometimes a little less… You will know when it feels right to roll into balls, not sticky on your hands and not with huge dry spots of dough in your bowl.
Creme together shortening (or butter), the peanut butter and sugars. Add eggs, stir in salt and soda mixing well. Add flour 1 cup at a time, mixing well and judging the moisture content of your dough. It should be able to be rolled into a ball by hand without sticking to your hands (lightly flour hands with flour, very lightly ie flour hands then clap them over the sink to remove excess), not be sticking to the sides of the bowl yet able to incorporate all of the flour. Every batch I do is slightly different on the flour… for some reason today it might want only 2 cups and tomorrow could be 3. I’ve never figured this out but assume it will be the same for you. Form into balls about 1 inch round (depends on how big you want your cookie I’ve done mega cookies for the kids with 3 inch balls… not recommended oh the sugar rush!! but fun to decorate when they come out of the oven with M&M’s). Place on ungreased cookie sheet with room between for expansion… about 2 inches between cookies unless you are doing the MEGA cookies then leave lots of room. Smash with a fork lightly to make a nice design on top of the cookie, then cook at 375 degrees for 10 minutes. These will be very soft when they come out of the oven so it is wise to let them cool for a little bit before removing them from your cookie sheet.
Have fun… this recipe turns out perfect every time and there is so much fun you can have with it…. Use any type of chocolate candy or ice them or leave them plain. Perfect thing to do on those days the kiddo’s can’t go outside to play.
